Blog Post Two: Home Fries

Remember a receipt is a guide; make it your own and adjust it to your taste.

Serves 4 people, prep time 30 min, cook time 30 min

  •             2 ½ lbs            peeled & sliced white/yellow potatoes

  •             ½                     onion

  •                                     Butter/Bacon Grease

  •                                     Salt/Pepper

 

Slice the potatoes as thin as possible, I use a mandolin. In cold water, let them sit for about 20–30 minutes.

  •             Shop the onion as fine as you like

  •             Add butter to a pan and sweat the onions.

  •             Drain the potatoes and add them.

  •             Add Salt and pepper; remember, less is more; you can always add but not take away.

  •             Let them get brown and crispy before you flip them.

You want to keep enough butter in the pan so they do not burn, but you do not want them to swim in grease, so keep an eye on them and add as needed. You can add some bacon grease for flavor.

Depending on your pan, they should be soft and slightly crispy on the outside in 20 minutes. Then you can Enjoy!
